History

In Isolina we pay tribute to the spirit and flavors of the Lima taverns of yesteryear, evoking those recipes that were written down in a notebook, hoping to endure over time. 

Our houses in Barranco and Surco are places to eat, drink and have a good time. There we celebrate spontaneous laughter, a good party and the freedom to eat as each one wishes.

José del Castillo

José, at the age of 28, found his true vocation in traditional Peruvian cuisine. He began leading the restaurant La Red, founded by his mother Isolina Vargas in 1981, leading it to become a reference in the Lima gastronomic circuit.  


In 2015 he opened the doors of Isolina, in homage to his mother, with the noble mission of rescuing the forgotten flavors in old cookbooks and with the aim of highlighting the value of traditional Lima food.


To this day, José has ensured that Isolina maintains the same spirit with which he started, the same generous portions and the good taste of each dish and cocktail. Thanks to this constancy, Isolina has become an obligatory stop for all those who visit our beloved capital and the restaurant trusted by all Limeños.
